Hakka Noodles Recipe

Hakka noodles is a popular Indo-Chinese dish loved for its spicy, flavorful, and slightly smoky taste. It’s quick to prepare and makes for a great meal on its own or as a side dish with other Chinese-style gravies.

Ingredients

For Boiling the Noodles:

  • 200 grams Hakka noodles

  • 5 cups water

  • 1 teaspoon salt

  • 1 teaspoon oil

For Stir-Frying:

  • 2 tablespoons oil (preferably sesame or vegetable oil)

  • 1 tablespoon garlic, finely chopped

  • Finely chopped 1 Green chilli (optional)

  • 1 teaspoon ginger, finely chopped

  • ½ cup onion, thinly sliced

  • ½ cup capsicum (bell pepper), thinly sliced

  • ½ cup cabbage, finely shredded

  • ½ cup carrots, julienned

  • ¼ cup spring onions (green part for garnish)

  • 1 tablespoon soy sauce

  • 1 teaspoon vinegar (white or rice vinegar)

  • 1 teaspoon red chili sauce (optional, for spice)

  • 1 teaspoon green chili sauce

  • ½ teaspoon black pepper powder

  • Salt according to taste.

  • 1/2 teaspoon sugar (optional)

Step-by-Step Instructions

Step 1: Boiling the Noodles

  1. Heat 5 cups of water in a large pan and bring it to a boil.

  2. Add 1 teaspoon salt and 1 teaspoon oil to prevent the noodles from sticking.

  3. Add the Hakka noodles and cook as per the package instructions (usually 4-5 minutes) until they are al dente (firm but cooked).

  4. Drain the noodles and rinse them thoroughly under cold water to stop them from cooking further.

  5. Drizzle a few drops of oil and toss them lightly to prevent sticking. Set aside.

Step 2: Preparing the Stir-Fry Base

  1. Heat 2 tablespoons of oil in a wok or a large pan over high heat.

  2. Add chopped garlic, ginger, and green chili. Sauté for a few seconds until fragrant.

  3. Add sliced onions and stir-fry for a minute until they turn slightly translucent.

  4. Toss in the shredded cabbage, julienned carrots, and sliced capsicum.

Cook the vegetables over high heat for about 2-3 minutes while stirring continuously to ensure they retain their natural crunch and vibrant texture.

Step 3: Adding the Sauces and Noodles

  1. Lower the heat slightly and add soy sauce, vinegar, red chili sauce, and green chili sauce. Mix well.

  2. Sprinkle salt, black pepper, and sugar (if using). Stir everything together.

  3. Add the boiled noodles and toss them gently, ensuring they are evenly coated with the sauce and vegetables.

  4. Stir-fry on high for 2 minutes, tossing constantly.

Step 4: Garnishing and Serving

  1. Turn off the heat and sprinkle chopped spring onions on top.

  2. Serve hot with extra soy sauce, chili sauce, or a side of Manchurian gravy.

Tips for Perfect Hakka Noodles

  • Use high heat for stir-frying to get a restaurant-style smoky flavor.

  • Do not overcook the noodles; they should be firm to avoid turning mushy.

  • Cut vegetables evenly for better texture and quick cooking.

  • Toss continuously to prevent noodles from clumping together.

  • Customize flavors by adding paneer, tofu, or chicken for variation.

Enjoy your delicious homemade Hakka noodles!
